Fried ice cream (rolled or shelled) is a high-margin showpiece dessert, and the machine that makes it is simpler than it looks. The AXOSPRO CB-500 Fried Ice Cream Machine uses a refrigerated stainless pan instead of a freezer cabinet. Understanding the thermal cycle is the difference between a smooth service and a sticky mess.
How the pan works
Under the pan sits a direct-expansion refrigeration plate. When you switch the unit on, the compressor pulls the surface temperature down to about -30°C (-22°F) in roughly 45 seconds. The pan stays cold the whole shift, so there is no waiting between batches — unlike a blast freezer you pre-chill once and reuse.
The 3-step service flow
- Pre-chill the pan – turn on 3–5 minutes before opening. The surface reaches -30°C and holds through the rush.
- Spread & freeze – ladle the ice-cream ball onto the cold surface and press gently. A thin shell sets in 20–40 seconds; roll to coat every side.
- Finish & serve – lift with a spatula, dust with cinnamon or crumbs, plate immediately.
Realistic throughput
One operator at one CB-500 can turn out 30–45 pieces per hour with consistent quality. Add a second pan (or a second unit) for festival peaks. Because the pan is always cold, your bottleneck is plating speed, not the machine.
Power & placement
The CB-500 runs on a standard 110V / 60Hz circuit (220V available on request) and needs the same ventilation clearance as a soft serve machine — see our machine placement guide. Keep it on a level counter away from direct heat.
