Why a fixed daily routine matters
A commercial soft serve machine is a live dairy (or mix) system. Skip the open/close steps and you get three predictable problems: off-flavours from stale mix, a freeze-up that stops service at peak, and bacterial growth that fails a health inspection. A 10-minute morning prime and a 5-minute nightly routine prevent almost all of them. This SOP works for piston (pump) and gravity (air) machines alike; we note where heat-treatment units differ.
Morning opening procedure (step by step)
- Power on and let the compressor start. If the unit was in overnight standby, it is already near temperature.
- Check mix level in each hopper. Refill with fresh, refrigerated mix if below the minimum line. Never run a hopper dry — it scorches the dasher.
- Prime / purge the cylinder: on most machines hold the "wash/prime" or "auto" button until mix flows cleanly from the drawing valve with no air gaps. This evacuates overnight sediment and any air locks.
- Cold-down check. From room temperature, full freeze takes 2–4 hours; from overnight standby, only 15–30 minutes. Draw is ready when product reads −4 to −7 °C (20–25 °F).
- First-draw test: pull a small serving into a cup. Texture should be smooth, not icy or soupy. If icy, let it freeze 10 more minutes; if soupy, lower the setting or check mix viscosity.
During service
- Keep hoppers topped; a half-empty hopper pulls in air and lowers overrun consistency.
- Wipe the drawing valve and beater after every few servings so product does not crust on the spout.
- If you switch flavours, run a short prime to flush the previous mix through the cylinder.
Nightly closing: standby vs full clean-out
This is the decision that trips most first-time operators:
| Machine type | Leave mix in overnight? | What to do |
|---|---|---|
| Heat-treatment (HT) machine | Yes — in standby/overnight mode | Switch to overnight mode; the HT cycle sanitises the mix automatically. No disassembly needed. |
| Non-HT (standard) machine | No | Empty hopper + cylinder, rinse, sanitise, air-dry. Mix left unrefrigerated in a non-HT cylinder is a food-safety risk by morning. |
Not sure which you have? If your control panel has an "overnight / HT" button, it is heat-treatment. If not, treat it as non-HT. See our cleaning & maintenance guide for the full weekly routine.
Quick daily checklist
| Step | Morning | Night |
|---|---|---|
| Power / standby | On or wake | Overnight mode (HT) or off (non-HT) |
| Mix | Top up, refrigerated | Empty (non-HT) / keep (HT) |
| Prime | Yes, until clean | Rinse + sanitise (non-HT) |
| Temp | −4 to −7 °C | — |
Worked example: a café serving 40 cups/day
A café opens at 08:00 and serves until 18:00. They arrive at 07:30, power on (unit was in standby), top up two hoppers, prime 30 seconds each, and by 07:50 the first draw tests clean — service starts on time. At close they run HT overnight mode; the only daily disassembly is a quick rinse of the spout. Weekly they follow the deep-clean in the mix & storage guide and the troubleshooting checklist.

About AXOSPRO commercial frozen-dessert equipment
AXOSPRO supplies commercial soft serve machines, slush / frozen-drink machines, commercial ice makers, popsicle machines and fried-ice-cream machines for North American restaurants, cafés, bars, hotels, food trucks and scoop shops. Equipment is built by Gongly (Jiangmen Guangli Machinery), our manufacturing partner in Jiangmen, China.
Two fulfilment channels: in-stock models ship from our US warehouse in 10–15 business days; other models and custom or high-volume orders are factory-direct from Jiangmen, China by sea in 30–45 days. For factory-direct sea shipments, import duties and brokerage are the buyer's responsibility — we provide commercial invoice and packing list to clear customs. We do not state "no customs" or "no import duty", because that only applies to domestic US-warehouse orders.
