Commercial Slush & Frozen Drink Machines: Syrup Ratios, Holding Temp and Food Safety

Sugar content (Brix) is the freeze dial

Slush mix freezes because of dissolved sugar. Typical usable range is 11–15°Brix. Below ~10°Brix the bowl won't hold a slush and turns to ice; above ~16°Brix it stays liquid and never sets. If you make syrup from concentrate, measure with a refractometer rather than guessing.

°Brix Result
< 10 Freezes solid / icy, won't slush
11–15 Proper slush texture
> 16 Too sweet, stays liquid

Holding temperature

Hold finished slush at −3°C to −7°C (26–19°F). The US FDA Food Code requires frozen desserts held for service at ≤ −4°C (25°F) for food safety, and the machine and bowl cleaned at least every 24 hours.

Alcohol lowers the freeze point

Frozen cocktails are popular but tricky: ethanol depresses the freeze point, so a margarita or daiquiri mix often won't set at normal settings. Either keep ABV low (or pre-chill and accept a softer set) and lower the bowl temp. Always label allergens and ABV.

Daily sanitation routine

  1. At close, empty the bowl; don't leave syrup sitting uncovered > 24–48 hr.
  2. Rinse with warm water, then sanitize bowl, auger and drip tray per your sanitizer's contact time.
  3. Use separate bowls for dairy vs non-dairy and for major allergens (nuts, dairy).
  4. Wipe the dispenser and air-vent; let parts air-dry before reassembly.

Cost per serving

Syrup cost per serving typically runs $0.15–$0.40 before cup and labor. Combine with the slush profit model to price correctly.
